Sweet & Sour Chicken

Remove bones from 3 or 4 chicken breasts. Cut in bite sized pieces. Cover with water and ½ teaspoon salt and soak an hour or so. Drain, dip in mixture of: ½ cup flour, ½ ts salt & ½ ts pepper. Fry in hot oil until brown. Remove & drain well.

In saucepan mix:

  • ¼ cup vinegar
  • ½ cup sugar
  • ¼ cup tomato catsup
  • 1 TBS. soy sauce

Mix 2 TBS cornstarch into ¼ cup water, add to other ingredients & stir over low heat till thick & is a clear red color. Add 1 cup pineapple chunks, ½ cup sliced green peppers, & 1 cup cooked carrots. Serve chicken on rice & pour sauce over. Sprinkle with a few chopped onions & cashews if you like.

Good and easy. Wayne is being a real good sport eating all the different foods I try so I can write them down. If HE likes it, it goes in the book -- some things he doesn't like are included, but not very many.
