Lasagna, Quick & Easy

  • ½ teaspoon oil
  • 1 small onion, diced
  • 1 lb. ground beef
  • 1 tablespoon flaked parsley (optional)
  • ¼ cup Parmesan cheese
  • ½ cup low fat mozzarella cheese
  • 1 small carton cottage cheese
  • 1 small can tomatoes or tomato sauce
  • 1 package, spaghetti seasoning
  • ½ package lasagna noodles

Cook the noodles in water until done. Saute onion in oil, add ground beef and cook until done. Add seasonings to beef.

In long baking dish place a layer of noodles. Spread a thin layer of beef mixture, then a layer of cottage cheese & shredded cheeses. Repeat this one time, then pour over all the tomatoes or sauce (may need to add a little water if you use sauce).

Top with another layer of the noodles & bake in 375° oven until the cheese melts & top noodles are done. Add or substitute whatever you have or like.
