Fluffy Marshmallow Icing

  • 1 cup granulated sugar
  • 1/3 cup water
  • ¼ teaspoon cream of tarter
  • 2 egg whites (1/3 cup)
  • 8 soft marshmallows, quartered
  • 1 teaspoon vanilla

Beat egg whites until stiff enough to hold a point. Then quickly mix together the sugar, water & cream of tarter in saucepan. Boil rapidly without stirring until syrup spins a fine thread. Stir in the marshmallows only until dissolved. Pour hot mixutre over the beaten egg whites, beating constantly. Add vanilla & continue to beat until icing holds shape. Ice cake & sprinkle with coconut.
