Chocolate Pound Cake

  • 2 cups unsifted flour
  • 1 teaspoon salt
  • ¾ cup cocoa
  • ¼ teaspoon baking powder

Sift together and set aside.

Dissolve 2 teaspoons instant coffee into ¼ cup hot water. Set aside.

Cream together in a large mixing bowl:

  • 1 ½ cups butter
  • 3 cups sugar

Add 2 teaspoons vanilla and one at a time, 5 eggs. Beat until smooth adter each egg. Add the flour mixture alternately with the coffee mixture, and 1 cup buttermilk. Bake in greased & floured bundt pan at 350° over for 1 hr. and 15-20 min., or till done.

Sherry made this for us to eat when Mike got home at night from his classes at Florida Institute of Technology when they were at Satellite Beach. We just took it out of the over and ate it hot with butter and coffee. I ate a LOT, and it was GREAT! We had a wonderful time on this trip -- walked on the beach every morning with the family. Must have been in 1978 -- Greg was just a little guy.
