Chicken Chow Mein

  • 3 or 4 chicken breasts
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • Pinch of sage or poultry seasoning
  • 1 small chopped onion

Cook above ingredients in enough water to cover until chicken is done. Remove chicken from broth, debone and cut into small pieces. Return to broth & add:

  • 2 sliced carrots
  • 2 diagonally sliced stalks celery
  • 1 small green pepper sliced

Cook till tender & add ¼ cup mushrooms or mushroom soup, & any other Chinese vegetable you like -- water chestnuts, snow peas, etc.

Dip out 1 cup of the broth & mix with 1 Tablespoon cornstarch, then return to pot and stir to thicken. Add 1 TBS oyster suace & a few cashews if you like. Serve over chow mein noodles with green onions sprinkled on top.
