Cecille's Jiffy Chocolate Cake

Combine:

  • 1 ½ cups flour
  • ¼ teaspoon salt
  • 1 cup sugar
  • ¼ cup cocoa
  • 1 teaspoon soda

      Add:

      • ½ cup Wesson oil
      • 1 teaspoon vanilla
      • 1 Tablespoon vinegar
      • 1 cup water

      Mix well. Bake in 8 by 11 in. pan for 30 min. at 350°. Cool and ice.

      Icing

      • 2 squares unsweetend chocolate, melted.
      • 3 Tablespoons shortening
      • 5 Tablespoons milk
      • 2 cups powdered sugar
      • 1 teaspoon vanilla
      • ¼ teaspoon salt
      • ½ cup nuts

      Mix till creamy and ice cooled cake.

      Cecille had this when we spent the night with them in Chapell Hill, N.C., when we took our first big vacation in our 9 passenger '66 Pontiac wagon. What a wonderful trip through the Sam's plant to watch them print one of Dad's books, the ride around the track at the Indiannapolis 500, Maggie Valley, on through the Smokies as far south as Savannah Beach, and much, much more. Steve will remember the first time I had "real" grits. A great trip.
