Betty North's 2 P.M. Rolls

  • 1 teaspoon sugar
  • 1 pkg. dry yeast
  • 2 Tablespoons warm water
  • 1 cup sugar
  • 2 cups water
  • 1 cup shortening
  • 2 cups cold water
  • 4 beaten eggs
  • 2 teaspoons salt
  • 10-14 cups flour

At 2 p.m. mix yeast with 1 tsp. sugar and 2 TBS warm water. Set aside. Boil together the 1 cup sugar & 2 cups water until sugar is dissolved. Add shortening, 2 cups cold water, eggs & salt. Mix together till cool. Add yeast mixture. Add flour last and knead.

Put in a very large bowl to rise till 10:00 p.m. Make into medium size rolls *amp; place 1 inch apart on well greased pans. Bake at 7:00 a.m. the next morning in a 350° oven for 10 to 15 minutes.

Thesse really rise if left out overnight as the recipe evidently implies, so I think it is much better to start the recipe at 7:00 or 8:00 a.m. and bake around 4:00 or 5:00 p.m. This makes a lot of rolls and they freeze so well you can keep on hand or make ahead of time. Of course I usually don't make these, but Betty North brought these to a church dinner & they were delicious. Would be convenient for working Moms who do not have time for much baking.
